I’ve never been much of a winner. I don’t mean I’m unlucky – I’ve hit the jackpot twice in my life with the birth of my two beautiful daughters – but I’ve never really been one of those people that wins things. I don’t gamble or play the lottery but I am borderline obsessive about entering competitions. Yet in my closer-to-40-than-I-care-to-admit years I can probably count on half a hand the number of times my name has been drawn out of the hat. There was that time in primary school when I won 3rd place in a raffle, then found $20 on the ground walking home from school… now that was a BIG day! And then, out of the blue, about a year ago I won a kitchen appliance from my favourite local food magazine. A pretty groovy little waffle iron that makes waffles in stick form – the perfect size for snacking on. In the box was the usual instruction booklet, and on the last few pages, several waffle batter recipes of various flavour combinations, including the inspiration for these delectable spiced apple waffles.
Apple and the warm spices of cinnamon, cloves and nutmeg are a classic combination, and in this light and crisp waffle batter they make for a sensational breakfast. Cooking these spiced apple waffles left the house smelling like apple pie.
A full batch of these yummy waffles was more than enough for four for breakfast, with still a few waffle sticks left over to pop in the freezer for handy lunch box snacks during the week. Don’t worry if you don’t have a cute little waffle stick maker, this recipe would work just as well using a standard waffle iron.
Waffles are great. Like pancakes they’re delicious plain and simple, or packed full of amazing sweet or savoury ingredients so you can make them to suit whatever flavour you are craving.
The slightly tart apple paired with the warm spice flavours in these waffles was divine. And my all time favourite thing about waffles is that the little indentations make the perfect home for pools of sweet maple syrup. Sure you wouldn’t have this for breakfast every day, but when the occasion calls for a sweet treat, these spiced apple waffles are hard to ignore.

- 2 cups flour
- 2 tsp baking powder
- 2 tsp ground cinnamon
- ¼ tsp ground cloves
- ¼ tsp ground nutmeg
- ¼ cup soft brown sugar
- 1 tbsp caster sugar
- ½ tsp salt
- 1½ cups milk
- 45g butter, melted
- 1 tsp vanilla essence
- 2 eggs, separated
- 1 apple for the waffles, plus additional apple slices to serve
- maple syrup to serve
- Preheat the waffle maker.
- Put the egg whites into a medium bowl and beat with an electric mixer until stiff peaks have formed.
- Place the flour, baking powder, spices, sugars and salt in a large bowl and stir with a whisk to combine.
- In a separate bowl, combine the milk, melted butter, vanilla and egg yolks.
- Pour the wet ingredients into the dry ingredients and stir with a whisk until you have a smooth batter.
- Grate one of the apples using a coarse grater and quickly stir through the waffle batter. Note: grated apple will brown very quickly so its best only to grate it when you are ready to add it to the waffle batter.
- Gently fold the egg whites through the batter.
- Lightly spray the plates of the waffle maker with oil and spoon ¾ cup of batter on to the bottom plate, spreading it gently to ensure even coverage. Close the lid and cook for 5-7 minutes until golden. Remove the cooked waffles and set aside. Repeat with the remaining batter.
- Tip: the waffles will be cooked about 1 minute after the waffle maker stops steaming...
- Serve the waffles piled high and drizzled generously with maple syrup and apple slices.
