I have a real thing for barbecue flavours. Rich, smokey, intense. And this delicious, veggie-packed sauce is so versatile it can bring a smokey hit to any number of dishes.
For me, it’s never better than with pork spare ribs. This thick and delicious barbecue sauce is perfect with ribs. It can be used as a marinade, or if you’re slow-cooking your ribs, as the sauce to surround the meat while it cooks. Or, simply heat the sauce through and baste the ribs with it before serving. Finger lickin’ good!
The other great way to use this barbecue sauce is to add it to your slow cooker with a piece of pulled pork, or to stir pulled pork through it before heating and using the meat and some fresh slaw to make the most amazing burgers!
But if pork is not your preference, this great barbecue sauce is an awesome match with chicken wings, to add a smokey hit to homemade baked beans, or even as an addition to your next grilled cheese sandwich!
It adds a really interesting twist when paired with mustard in a hot dog, and is sensational on a pizza base topped with chicken, fresh tomato, basil and mozzarella.

Totally loaded barbecue sauce
A rich, smokey barbecue sauce loaded with hidden vegetables!
Ingredients
- 25 g butter
- 1 brown onion
- 4 cloves garlic
- 1 tbsp fresh ginger
- 1 tbsp fresh rosemary
- 1/2 red capsicum
- 2 tbsp smoked paprika
- 1 apple
- 1/4 head cauliflower
- 1 courgette/zucchini
- 250g cherry tomatoes
- 1/2 cup chicken stock
- 1/4 cup dark rum or brandy
- 2 tbsp char siu sauce
- 2 tbsp soy sauce
- 1 tsp fennel seeds
Instructions

This recipe is easier if you prep everything before you start cooking.
– Roughly chop the onion
– Finely chop the rosemary, and dice or grate the ginger and garlic
– Finely chop the capsicum
– Chop the apple (no need to peel), cauliflower and courgette/zucchini

In a large saucepan or stock pan, melt the butter over a medium heat. Add the onion to the pan and cook for 5-7 minutes until very soft and starting to colour.

Add the garlic, ginger, rosemary and red capsicum. Cook, stirring, for 3-4 minutes or until the capsicum is starting to soften.

Add the smoked paprika, apple, cauliflower, courgette and cherry tomatoes and allow to cook for a minute.

Pour in the chicken stock and rum or brandy, and stir in the char siu sauce, soy sauce and fennel seeds. Increase the heat to bring the sauce to a boil, then reduce the heat to a gentle simmer.

Cover and simmer for 25-30 until all the vegetables are soft and well cooked.

Using a heat-proof stick blender, blitz the sauce until smooth. Can be used immediately or allow to cool, then store in an air-tight jar in the fridge for up to a week.

Char siu sauce is an oriental barbecue sauce that is used for marinating pork and ribs. It can be found in your local Asian grocery store, or in the international section of your supermarket.
